| 1 | 益生乳杆菌的筛选研究显示文摘以分离保存的15株乳杆菌为研究对象,从中筛选益生乳杆菌两株。通过检测乳杆菌的疏水性和自聚性,得到表面疏水性和自聚性均较高的菌株为Ind-3、CH10和M8。其中,乳杆菌CH10和M8在模拟胃肠环境下活菌数均达到106mL-1以上。通过灌胃乳杆菌CH10和M8,表明小鼠体重增加明显高与对照组,且实验组小鼠粪便中的β-半乳糖苷酶活性明显高于对照组。灌胃两株乳杆菌后,小鼠肠道内双歧杆菌与乳杆菌活菌数提高了,且肠杆菌、肠球菌和产气荚膜梭菌的生长繁殖受到不同程度的抑制,而对照组无明显变化。结果表明筛选出的两株乳杆菌可以促进小鼠对营养物质的吸收,提高肠道内有益菌的数量,抑制有害菌的生长繁殖,或许能够改善寄主肠道的微生态环境。 | 李姗姗 张俊娟 杨雪娟 韩俊华 Moneta Jadwiga 张柏林 裴家伟 | 2012 | 中国乳品工业2012，40，5： | 4 |
| 2 | 酸面团酵母菌Sy22的分离与发酵性能评价显示文摘为了获得性能优良的面团发酵菌株,本试验从来自内蒙古的发酵酸面团中分离获得5株酵母菌株,分别对其发酵性能进行测定,最终选取性能优良菌株Sy22进一步研究。基于形态学、生理生化试验以及26SrDNAD1/D2区序列分析综合测试结果,菌株Sy22被鉴定为酿酒酵母(Saccharomyces cerevisiae)。在30℃下发酵12h,分别对单独添加该菌株面团的发酵性能以及该菌株与类食品乳杆菌412联合发酵面团的发酵性能、活菌数进行研究,结果显示:单一酵母菌株发酵后,面团pH由6.07降至5.36,滴定酸度由3.6°T增加到5.02°T,发酵力为0~1.32%;联合菌株发酵后,酸面团pH由5.58下降至3.85,滴定酸度由5.24°T增加到14.02°T,发酵力为0~1.79%,酸面团中的酵母菌活菌数为8.2×108 CFU/g,乳杆菌412活菌数为9.6×109 CFU/g。由此得出,菌株Sy22可单独作为面团发酵菌株使用,能很好的参与面团的发酵;与类食品乳杆菌412联合后发酵能力好,并表现出良好共生性。 | 杨雪娟 潘向辉 李姗姗 裴家伟 张柏林 Moneta Jadwiga | 2012 | 河北农业大学学报2012，35，5： | 4 |
