| 1 | Metabolomics mechanism of traditional soy sauce associated with fermentation time显示文摘Given that fermentation time has significant impact on quality and flavor of soy sauce,a global understanding of the metabolic mechanism as fermentation time prolonged is essential for producing satisfactory and consistent quality of traditional soy sauce.Herein,the metabolic compounds changes of soy sauce associated with fermentation time up to 10 years were comprehensively investigated by using Chinese traditional fermented soy sauce(CTFSS)as a demonstration.Results showed that formaldehyde nitrogen,total soluble nitrogen(TSN),non-salt soluble solids,amino acids,free 5’-nucleotides and volatile compounds in CTFSS changed obviously during fermentation.Specifically,glutamic acid and aspartic acid were prominent in CTFSS.Continuous decrease in content of hypoxanthine(Hx)was found from 1 M(1-month soy sauce)to7 M(7-months soy sauce).Furthermore,a significant opposite tendency for changes between some volatile compounds and amino acids was indicated that there was a transformation between these two components.Therefore,a better understanding to the influence of fermentation time on soy sauce had been proposed.As the formation and conversion of amino acids and sugars might be mainly responsible for flavor formation in CTFSS,the ratio of these two reactions rate led the metabolism to be divided into three steps,degradation,conversion and balance. | Li Zhu Siyu He Ying Lu Jianhong Gan Ningping Tao Xichang Wang Zaoli Jiang Yuanxiang Hong Changhua Xu | 2022 | Food Science and Human Wellness2022,11,2: | 7 |
| 2 | A fractal and scale-free model of complex networks with hub attraction behaviors显示文摘It is widely believed that fractality of complex networks originate from hub repulsion behaviors(anticorrelation or disassortativity), which means that large degree nodes tend to connect with small degree nodes.This hypothesis was demonstrated by a dynamical growth model, which evolves as the inverse renormalization procedure, proposed by Song et al. Now we find that the dynamical growth model is based on the assumption that all the cross-box links have the same probability e to link to the most connected nodes inside each box.Therefore, we modify the growth model by adopting the flexible probability e, which makes hubs to have higher probability to connect with hubs than non-hubs. With this model, we find that some fractal and scale-free networks have hub attraction behaviors(correlation or assortativity). The results are the counter-examples of former beliefs. | 5 | Effect of pre-annealing prior to cold rolling on the precipitation,microstructure and magnetic properties of strip-cast non-oriented electrical steels显示文摘A novel processing route involving strip casting, pre-annealing treatment, cold rolling and recrystallization annealing was applied to a Fe-2.6%Si steel to improve the magnetic properties. The impact of as-cast strip pre-annealing on the microstructure, texture, precipitation and magnetic properties were investigated by electron probe micro-analysis, transmission electron microscopy, and X-ray diffraction analysis,etc. It was found that the precipitation of second-phase particles during strip casting was restrained by rapid solidification. The absence of pre-annealing led to the occurrence of a large amount of 20–50 nm Mn S precipitates in the final annealed sheets, which is responsible for fine grains and high core loss(4.01 W/kg) due to grain boundary pinning effect. Although the microstructure and texture of 900–1000?C pre-annealed samples were similar to those of as-cast strip, significant grain coarsening together with the strengthening of-fiber texture was observed in the 1100?C pre-annealed strips. In comparison with the case of as-cast strip, a higher amount of large-sized precipitates consisting of manganese sulfide and/or aluminum nitride occurred in matrix after pre-annealing. Correspondingly, in the final annealed sheets, the number density of precipitates with sizes smaller than 100 nm was substantially reduced, and100–200 nm and 200–500 nm sized particles became more dominant in samples subjected to 30-min and 120-min pre-annealing treatments respectively. In addition, the average grain size of final annealed sheets increased with the pre-annealing temperature and time because of the weakened pining effect of coarsen precipitates. Ultimately, the magnetic induction of samples subjected to pre-annealing was slightly increased and ranged from 1.73 T to 1.75 T owing to the enhancement of {100} recrystallization texture, and simultaneously the core loss significantly decreased until a minimum of 3.26 W/kg was reached. | 8 | β-delayed proton decays near the proton drip line显示文摘We briefly reviewed the experimental study on a-delayed proton decays near the proton drip line published by our group during the period of 1996―2004, namely the first observation of the a-delayed proton decays of 9 new nuclides in the rare-earth region and the new measurements of a-delayed proton decays of 5 nuclides in the mass ~90 region near the N = Z line with the aid of the “p-?” coincidence in combination with a He-jet tape transport system. In the meantime some important experimental technique details were supplemented. The experimental results, including the half -lives, spins, parities, deformations and production reaction cross sections for the 14 nuclei were summarized and compared with the current nuclear-model predictions, and then the following points were represented. (1) The experimental half-lives for 85Mo and 92Rh as well as the predicted “waiting point” nuclei 89Ru and 93Pd are 5―10 times longer than the theoretical predictions given by M?ller et al. using a macroscopic-microscopic model. It considerably influences the predictions of the abundances of the nuclides produced in the rp-process. (2) The current-model predictions are not consistent with the experimental assignments of the spins and parities for the proton drip-line nuclei 142Ho and 128Pm. However, the nuclear potential energy surface (PES) calculated by using a Woods- Saxon-Strutinsky method reproduced the experimental results. | 9 | Pan-sharpening:a fast variational fusion approach显示文摘A fast variational fusion model based on partial differential equations (PDEs) is presented for pansharpening. The functional framework consists of several energy terms. The gradient energy term is created by calculating the gradient vector field of the panchromatic image and the geometry of the pan is injected into the multi-spectral bands. The radiometric reduction energy term and the channel correlation energy term are defined to decrease the radiometric distortion and preserve the correlation of multi-spectral channels while enforcing the inter-bands coherence. Inspired by the shock-filtering model, an inverse diffusion term for image enhancement is put to PDEs which are deduced by minimizing the energy functional. In comparison with the state-of-the-art fusion approaches based on `a trous wavelet and non-sampled contourlet, our model can obtain the fused image with a high spatial or spectral quality by adjusting the weight coefficients of the energy terms. It can also achieve a rather good trade-off between the spatial resolution improvement and the spectral quality preserving. | 10 | Tropical cyclone spiral band extraction and center locating by binary ant colony optimization显示文摘Tropical cyclone (TC) center locating is crucial because it lays the foundation for TC forecasting. Locating TC centers, usually by manual means, continues to present many difficulties. Not least is the problem of inconsistency between TC center locations forecast by different agencies. In this paper, an objective TC center locating scheme is developed, using infrared satellite images. We introduce a pattern-matching concept, which we illustrate using a spiral curve model. A spiral band model, based on a spiral band region, is designed to extract the spiral cloud-rain bands (SCRBs) of TCs. We propose corresponding criteria on which to score the fitting value of a candidate template defined by our models. In the proposed scheme, TC location is an optimization problem, solved by an ant colony optimization algorithm. In numerical experiments, a minimal mean distance error of 17.9 km is obtained when the scheme is tested against best-track data.
