1不同月份采摘的绿茶中茶多酚含量及其营养学意义显示文摘目的:为了解不同月份采摘的绿茶中茶多酚含量及其营养学意义,开展了本项研究。方法:新鲜茶叶样品采自江西省婺源县大樟山茶场的5个不同种植区,茶叶采摘时间分别为2000年8月、2001年3月、4月和5月。按常规炮制方法处理,制成绿茶。分析测定了其中9种茶多酚类化合物,以及没食子酸及其衍生物和黄酮醇类化合物。结果:4月份采收的绿茶中茶多酚类化合物总量最高、占绿茶总重量的32.3%,是3月份采摘的绿茶所含茶多酚类化合物总量的1.41倍、5月份的1.34倍、8月份的2.45倍,绿茶中茶多酚类化合物总量的排列顺序为4月>5月>3月>8月。其中绿茶中所含的功能因子,茶多酚类化合物中含量最高的主成分———表没食子儿茶素没食子酸酯(EGCG)的含量顺序同样是4月>5月>3月>8月。结论:不同采摘期绿茶中具有代表性的生物活性物质———茶多酚含量存在较大差异。赵霖 Dieter Treutter 罗永明 2005军医进修学院学报2005,26,5:10
