| 1 | 茶油挥发性成分的固相微萃取-气相色谱-质谱分析显示文摘在建立茶油主要挥发性成分定量分析方法的基础上,采用顶空固相微萃取(HS-SPME)气相色谱-质谱(GC-MS)联用仪和50/30μm DVB/CAR/PDMS纤维头测定液压机榨茶油的挥发性成分。结果显示:13种茶油主要挥发物的浓度与峰面积间呈现良好的线性关系,相关系数(R2)在0.9841~0.9999之间,检测限0.04~0.44μg/g,加标回收率91.83%~105.11%,并有较好的重现性,7次连续检测的相对标准偏差范围2.51%~8.00%。液压机榨茶油毛油中的挥发性成分主要为醛类、醇类、烯类、酮类、酯类、酸类等。挥发性物质含量在前10位的是壬醛、α-蒎烯、乙酸乙酯、戊醇、苯甲醛、辛醇、α-木罗烯、壬醇、癸醇、辛醛,其含量总和为21.26μg/g,占总量的68.40%。此法对茶油挥发性成分的分析快速、方便、准确。 | 龙奇志 黄永辉 钟海雁 李忠海 Paul Prenzler Kevin Robards | 2009 | 中国食品学报2009,9,3: | 23 |

| 3 | 茶油气味感官评价的初步研究显示文摘运用评分法、简单描述法及3点法对9份油样(其中压榨毛油5份,超临界CO2萃取毛油、浸出毛油、冷榨油、压榨一级油各1份)进行气味的感官鉴评。评分法的结果为江西压榨毛油的分值为最高,其他压榨毛油和超临界萃取毛油次之,再者是冷榨油,最低的是一级压榨油和浸出毛油。江西压榨毛油、浸出毛油分别超出了评分均值控制图的控制上、下限;在茶油气味的描述中,除给定的9个描述语外,鉴评者还给出了23个描述语,其中具茶油香味、青草味、辛辣味、青泥味和酸味出现的频率较高。江西压榨毛油最具茶油香味,其次是湖南双峰压榨毛油和江西超临界萃取毛油;三点法试验中,除浙江建德压榨毛油与湖南怀化压榨毛油间的差别不显著(P>0.05),江西压榨毛油与江西超临界CO2萃取法毛油、湖南双峰压榨毛油及湖南株洲压榨毛油、江西压榨毛油及江西冷榨法毛油、湖南怀化压榨毛油及江西压榨毛油、湖南怀化压榨毛油及江西压榨毛油之间均有显著差异(p<0.05)。茶油香气感官评分方法及标准的建立对于茶油气味的感官评价及探讨与成分间的关系具有指导意义。 | 钟海雁 黄永辉 龙奇志 李忠海 Paul Prenzler Kevin Robards | 2008 | 食品与机械2008,24,5: | 12 |
| 4 | SPME萃取头对茶油挥发物萃取效果的影响显示文摘固相微萃取目前被广泛地用来测定液态、气态,甚至固态物质的挥发组分,不同待测物的性质决定了萃取头的种类选择。采用4种常用的SPME涂层萃取头(100μmPDMS、85μmPA、65μmPDMS/DVB、50/30μm DVB/CAR/PDMS)对茶油挥发物的提取性能进行了比较研究,结果表明:65μmPDMS/DVB萃取头对较高沸点物质如苯甲醛、正辛醛、正辛醇、正壬醛、正壬醇的吸附比50/30μmDVB/CAR/PDMS萃取头要灵敏,但50/30μm DVB/CAR/PDMS萃取头对较低沸点物质的吸咐要灵敏很多。DVB/CAR/PDMS涂层萃取头所得的总峰面积的平均值最大,其余依次是PDMS/DVB、PA、PDMS;DVB/CAR/PDMS、PDMS/DVB、PA、PDMS对挥发物吸咐总峰面积与挥发物总量之间存在有线性关系,其相关系数(R2)分别是0.9939、0.9888、0.9176、0.9917;因此,65μm PDMS/DVB和50/30μm DVB/CAR/PDMS的萃取头较适用于茶油挥发物的提取。 | 钟海雁 黄永辉 龙奇志 李忠海 Paul Prenzler Kevin Robards | 2008 | 中国粮油学报2008,23,4: | 9 |
