1大豆蛋白-淀粉基素肉制品高湿挤压工艺优化显示文摘采用双螺杆挤压机,以高直链玉米淀粉、大豆分离蛋白、谷朊粉为原料,应用高湿挤压技术制备大豆蛋白-淀粉素肉。探讨淀粉添加量(1%~5%)和喂料速度(10~50 g/min)、螺杆转速(60~180 r/min)、挤压温度(100~180℃)等操作参数对素肉的持水性和持油性的影响规律,并通过响应面优化得到最优参数。结果表明,淀粉添加量和操作参数对素肉的持水性和持油性有较大的影响,当淀粉添加量3%,喂料速度30 g/min,螺杆转速120 r/min,挤压温度140℃时,素肉持水性和持油性最优,分别为1.454 g/g和0.738 g/g。在最优条件下的素肉具有紧密的纤维组织状结构,硬度适宜,弹性和内聚性较好。杨勇 王中江 陈惠惠 江连洲 王喜波 Olga Babich 李秋荣 2019中国食品学报2019,19,12:16
2物理处理对大豆蛋白-磷脂酰胆碱结构影响的拉曼分析显示文摘利用拉曼光谱技术分析了超声处理及高压均质作用下大豆蛋白-磷脂酰胆碱复合物结构的变化规律。研究表明,超声处理及高压均质处理均提高了大豆蛋白α-螺旋结构及无规则卷曲结构含量,并降低了大豆蛋白的β-构型结构。大豆蛋白-磷脂酰胆碱交互作用显著降低了蛋白质α-螺旋结构,并转变为无规则卷曲结构及β-折叠结构。超声处理及高压均质作用下大豆蛋白-磷脂酰胆碱复合物中蛋白质α-螺旋结构均低于高速分散处理组,而β-折叠结构及无规则卷曲结构含量较高。超声处理、高压均质作用下大豆蛋白色氨酸、酪氨酸残基趋于'暴露态',促进了与磷脂酰胆碱之间的疏水交互作用。大豆蛋白-磷脂酰胆碱的交互作用位点为大豆蛋白疏水氨基酸侧链及磷脂酰胆碱疏水脂链,两者之间的疏水作用是大豆蛋白-磷脂酰胆碱交互作用的主要形式。超声处理、高压均质作用下大豆蛋白二硫键构型未发生显著变化,仍保持旁-旁-反式构象振动模式。大豆蛋白-磷脂酰胆碱交互作用也未改变二硫键构型。江连洲 张潇元 朱一方 李杨 OLGA Olegovna Babich 王中江 2018农业机械学报2018,49,2:7
3Endoscopist's approach to nutrition in the patient with pancreatitis显示文摘Nutritional therapy has an important role in the management of patient with severe acute pancreatitis.This article reviews the endoscopist's approach to manage nutrition in such cases.Enteral feeding has been clearly validated as the preferred route of feeding,and should be started early on admission.Parenteral nutrition should be reserved for patients with contraindications to enteral feeding such as small bowel obstruction.Moreover,nasogastric feeding is safe and as effective as nasojejunal feeding.If a prolonged course of enteral feeding(>30d) is required,endoscopic placement of feeding gastrostomy or jejunostomy tubes should be considered.Shahzad Iqbal Jay P Babich James H Grendell David M Friedel 2012World Journal of Gastrointestinal Endoscopy2012,4,12:4
4Endoscopic approach to pancreatic pseudocysts:An American perspective显示文摘Pancreatic pseudocysts,abscesses,and walled-off pancreatic necrosis are types of pancreatic fluid colle-ctions that arise as a consequence of pancreatic injury.Pain,early satiety,biliary obstruction,and infection are all indications for drainage.Percutaneous-radiologic drainage,surgical drainage,and endoscopic drainage are the three traditional approaches to the drainage of pancreatic pseudocysts.The endoscopic approach to pancreatic pseudocysts has evolved over the past thirty years and endoscopists are often capable of draining these collections.In experienced centers endoscopic ultrasound-guided endoscopic drainage avoids complications related to percutaneous drainage and is less invasive than surgery.Jay P Babich David M Friedel 2010World Journal of Gastrointestinal Endoscopy2010,2,3:2
